- 1 cup granulated sugar (minus 2 tablespoons)

Instructions
- Preheat your oven to 350°F (175°C) and line a heavy baking sheet with unbleached parchment paper.
- In a large mixing bowl, gently fold together the peanut butter, sugar, and egg until the dough is smooth.
- Portion the dough into 1-inch balls using a cookie scoop and place them on the prepared baking sheet.
- Use a fork to create a criss-cross pattern by pressing down on each ball from two opposite directions.
- Bake for 12 minutes until the edges are just set, then allow them to rest on the tray for 2 minutes before transferring to a wire rack.
Notes
To prevent the fork from sticking when making the criss-cross pattern, dip the tines into a little bit of extra granulated sugar between cookies.
